Ingredients

  • 14 oz smoked sausage sliced into 1/2-inch coins (such as kielbasa)
  • 1 1/2 lb baby potatoes cut into 3/4-inch pieces
  • 2 ears corn cut into 2-inch pieces
  • 2 bell peppers cut into 1-inch pieces (any color)
  • 1 small yellow onion cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter divided (optional)
  • chopped fresh parsley for serving (optional)

Equipment

  • Heavy-duty aluminum foil
  • Long-handled tongs
  • Heat-resistant gloves
  • Instant-read thermometer

Method

Prep the Packets
  1. In a large bowl or zip-top bag, toss the potatoes, corn, peppers, onion, and sausage with the olive oil, smoked paprika, garlic powder, Italian seasoning, salt, and pepper.
  2. Tear four 12x18-inch sheets of heavy-duty foil. Divide the mixture evenly among them, mounding it in the center. Top each with 1/2 tbsp butter, if using.
  3. Bring the long sides of the foil together and fold down twice to seal, then fold in the ends. Leave a little room inside for steam.
Over the Campfire
  1. Let the fire burn down to glowing coals with no tall flames.
  2. Place the packets directly on the coals or on a grate just above them.
  3. Cook 20 to 30 minutes, flipping once halfway with tongs, until the potatoes are fork-tender.
On the Grill
  1. Preheat the grill to medium-high, about 400°F.
  2. Grill the packets 20 to 25 minutes, flipping once halfway, until the potatoes are fork-tender.
In the Oven
  1. Preheat the oven to 400°F.
  2. Place the packets on a baking sheet and bake 25 to 30 minutes, until the potatoes are fork-tender.
In the Air Fryer
  1. Preheat the air fryer to 380°F.
  2. Instead of fully sealed packets, fold the foil into open-top boats that fit your basket with room for air to circulate. Work in batches if needed.
  3. Cook 15 to 20 minutes, stirring halfway, until the potatoes are tender and the edges are browned.

Notes

Open packets carefully. The steam inside is very hot.
Coal heat varies a lot. Check one packet at 20 minutes by poking a potato with a fork.
Using raw sausage instead (fresh bratwurst or Italian sausage)? Cook until it reaches 160°F inside, and add 5 to 10 minutes.
Reheating leftovers: heat until the sausage reaches 165°F.
